One Ten Grill Opens for Business

The American-style cuisine eatery takes over at the old location of Cafe Madrid.

Chelmsford Street’s newest eatery is here, as Café Madrid officially became the One Ten Grill on Friday.

After years of serving Spanish cuisine, the eatery was sold to local restaurateur John Gailey recently, the latest restaurant in a string that he has owned stretching from Boston to Santa Barbara.

“Chelmsford is a great town and I think there’s a great need for this type of restaurant here,” said Gailey, noting that out of the 39 restaurants he found in Chelmsford, only three serve American-style food comparable to what is now on the menu at the One Ten Grill.

“We hope to bring an upbeat, positive attitude. It’s not rocket science. If you present good food in a good place at a good price, people will keep coming back,” he said.

The kitchen will be run by Brian Diederich, who brings 15 years of experience with him from various other restaurants and catering jobs, most recently including a diner Gailey owns in Devins.

Diederich has spent the past few weeks training Café Madrid’s cooks during the transition, which he thinks has gone smoothly.

“I think there’s an excitement. Things are falling into place,” said Deiderich, who also constructed the new menu. “(the old chefs) are happy to be working and getting more comfortable cooking this new style of food.”

The One Ten Grill is open for lunch from 11 a.m. to 4 p.m. on weekdays and noon to four on weekends. Dinner will be served from 4 to 10 p.m. seven days a week and breakfast is served from 7 to 11 a.m. on Fridays and 8 a.m. to noon on the weekends.
